The classes are intended to empower you through examples of organization, ease of preparation, and a “no-worries” attitude. Once you have that, the rest is easy.
I’m the poster child for the raw-food lifestyle. I’m an attorney who didn’t have time to cook, I worked 60-80 hours per week. My son hates having a “raw food mom” so I had no support at home. And my idea of cooking used to be warming my engine in a drive thru. So if I can go from that to making all this gorgeous raw food, so can you. Take heart, it’s not difficult. It’s all about what you tell yourself. For me, at 300 pounds, it was “change or die” so I had to figure it out. I had to make this lifestyle as simple, as waste-free, as quick and as tasty as possible. And that’s how I teach it – as easy and as frustration-free as it can be. You’re welcome to complicate it as much as you like.
The class is about empowerment. In the space of a 5-hour class I get to show you the organization of my kitchen. The systems that I put in place to always have my raw food convenient. That is the key to success – keeping your raw food convenient so that you don’t fall prey to convenience food.
After you see my systems and learn my short-cuts, tips and tricks, we make several Quick & Easy raw meals from my dehydrated and perishable pantries (my 5-minute meals). Then we make a few of the pantry items, a bread or cracker, a spread, a dessert, all while I show just how easy it all can be with my “no worries” attitude. You’ll have to trust me that all the recipes I hand out are equally easy. If it takes more than 10 minutes, I won’t make it.
After we eat and chat a bit, you telling me what you’d like to accomplish with raw food and your challenges at home, I’ll take requests, and we’ll make the foods you like (if they require dehydration, then I’m the only one who gets to eat them, but you’ll get the idea, LOL). This is an opportunity for me to grow. I have a full-service raw-food kitchen and we can make just about anything. The key is to start with the sensations in mind. Like if you wanted to RawCreate a jelly donut, think about what you love about sinking your teeth into one, and that’s where we’ll start. Mmmmmm… Playing with your food can be fun.

While at a cleansing center in San Diego, I took a class on the raw food lifestyle from Joan Jackson. I was ill and had little energy for the daily activities of life.
